Hello everybody, I am Francis Lo, a graduate of
Certificate in Western Cuisine and F&B Operations (HO-311) in 1997.
I am now the Sous Chef at the Centurion Bar & Grill in the Hong Kong
Jockey Club and the President of the Hong Kong Young Chef Club. It
is almost ten years since I graduated from the Hospitality Industry
training and Development Centre.
I started my first job as a pastry apprentice at the Grand Hyatt.
After two years I joined Café Deco as a junior cook. To broaden my
knowledge in the Western Cuisine I went on for further studies in
the United States of America. I earned associate degrees in culinary
arts and restaurant management with honours at the Art Institute of
Houston. I also competed in the American Culinary Federation’s
Junior Culinary Olympics and got a gold and silver medal. I was also
a finalist in the Accellis Culinary Arts Challenge 2000, being named
one of the top 20 students in the USA.
On my return to Hong Kong I worked as a Sous Chef at the Solstice
Restaurant. My dedication and good performance were appreciated by
the Executive Chef and I was promoted to Restaurant Manager. After
two year’s there, I moved on to my present job.
I am still working hard to improve myself by continually learning
and studying. By exploring new knowledge and technique, I am able
cope with the changing and demanding environment and meet customer’s
expectations. Finally, I hope all of you will work hard to prepare
yourself to contribute to the industry.
