My name is Lee Man Ki; I am now working in the
Conrad International Hong Kong, in the Italian Restaurant "Nicholinis"
as a Junior Sous Chef.
I graduated from the Hotel Industry Training
Centre HOTC (now Hospitality Industry Training and Development
Centre HITDC) course in Western Food Preparation in February 1992.
During my studies, the instructors provided many opportunities for
me to learn a lot of basic theory and practical culinary skills.
This made me more efficient for real life operation in a kitchen
which was impossible to learn anywhere else within one year; even in
a five-star hotel. The instructors did not hesitate in teaching and
their attitude was excellent, especially Mr. Lo, Mr. Tong and Mr.
Mak. They were willing to teach me so much even though I was a kid
without any experience at that time, they braced me when I felt
frustrated and confused, and made me thoroughly understand the
importance of enhanced team spirits.
After graduating from the HOTC, I did not give up studying, I
continuous made an effort to fully utilize my days off to gain
several certificates in Apprentice Course; Advanced Cookery Course;
a Hotel, Catering and Institutional Operation Course at Haking Wong
Technical Institute and the Higher Diploma in Hotel and Catering
Management in Polytechnic University. I'm now taking a Degree Course
in Hotel and Tourism Industry; it's a very tough life and it's not
easy for me, but I believe that nothing can challenge you if you are
well equipped and aggressive; especially nowadays; the competition
is so high among our society.
Though I'm busy all the time during restaurant operations of the
restaurant, I'm still in contact with Mr. Tong and Mr. Mak when I've
time because they continuously give advise to me on my work and they
are my friends now. Once more I would like to thank HITDC and all
the many instructors for their effort.
